I like to frequent Michael Jordan’s Steak House at the Mohegan Sun Casino near where I live. Don’t get me wrong. I love the rib eye and the NY strip… but the lamb… OMG! The twin double-cut lamb chops at Michael Jordan’s are amazing! One of the highlights of the dish is the schmear of hummus under the chops. Now, I love me some hummus, but did you know that 1/2 cup of chick peas has like 21 grams of NET CARBS?? That’s way too much for my blood.

I have made hummus before. It’s basically a paste of chick peas (Garbanzo beans), Tahini (sesame paste), garlic, parsley, olive oil, lemon juice, and spices (cumin and paprika being primary). I don’t know if you know this, but chick peas have ZERO flavor. If I could substitute them with a roasted cauliflower (and roasted garlic) I could get the same consistency of chick peas with the FLAVOR of cauliflower and garlic. That would be awesome!

So the next time you are looking for a side dish, and your mind goes to cauli-mash, consider elevating it by serving this amazing hummus.[wpurp-searchable-recipe]Carl's Keto Hummus Tahini - - cauliflower (approx 500 g), Tahini paste (about 4 tbsps), garlic (broken up into cloves), olive oil (extra virgin), Kalamata olives (about 1/2 cup), parsley (flat leaf), paprika, cumin, lemon juice, Salt, Preheat oven to 300F (about 150C); Crush garlic cloves with palm and remove skin. Chop cauliflower and place on cookie sheet with garlic cloves, save one, and olive oil. Sprinkle cumin and paprika on top.; Roast until browning around the edges, about 30 minutes. Remove from oven and allow to cool for at least 10 minutes.; Combine with remaining ingredients including one bulb of fresh garlic in a food processor and combine until smooth and silky.; Serve in a bowl with olive oil and paprika sprinkled on top . The picture had something green in it parsley? Cilantro?. I didn’t see it in the recipe.

Flat leaf parsley. I forgot to put that in the recipe. I’ve updated it now.

My wife and I made this today… very tasty… had a bit in a keto bread… will probably spread some on some baked chicken for dinner tonight…

I’m making this now, with a slight variation. I was rotisserie cooking deboned leg of lamb while listening to this recipe, roasting the bones and ugly bits to give some color before turning it into broth in the Instant Pot. I was planning to do mashed cheesy cauliflower, so I changed it up to make recipe.

My big change from Carl’s recipe? Roasting the cauliflower and garlic in the lamb fat from roasting the stock bits… I’ll have reviews soon!
